Bring a #medium pot{} of salted water to a boil. Wash and dry produce. Peel and mince @garlic{3%cloves}. Trim and cut @scallions{3%pieces} crosswise into 1-inch pieces; thinly slice one-quarter of the scallion greens. Trim, peel, and grate @carrots{2%pieces}. Roughly chop @peanuts{¼%cup}.

In a #small bowl{}, whisk together @sweet soy glaze{2%tbsp}, @pork ramen stock concentrate{1%packet}, half the @szechuan paste{1%tbsp}, half the @white wine vinegar{1%tbsp}, half the @peanut butter{2%tbsp}, @sugar{1½%tsp}, ¼ cup water, and @chili flakes{1%tsp} to taste until smooth.

Heat a drizzle of @cooking oil{1%tbsp} in a #large pan{} over medium-high heat. Add @ground pork{10%oz}. Using a spatula, press into an even layer. Cook, undisturbed, until browned on bottom ~{3%minutes}. Break up meat into pieces and continue cooking until ground pork is cooked through ~{3%minutes} more.

Add garlic and scallion pieces to pan with ground pork; cook until fragrant ~{1%minute}. Stir in sauce; cook until reduced and thickened slightly ~{1%minute}.

Once water is boiling, add @ramen noodles{½%lb} to pot. Cook, stirring occasionally, until tender ~{1%minute}. Drain and thoroughly rinse under cold water ~{30%seconds}. Add drained ramen noodles, carrots, and @butter{1%tbsp} to pan with ground pork mixture. Toss until ramen noodles are warmed through and everything is thoroughly combined ~{1%minute}. If needed, stir in water a splash at a time until ramen noodles are thoroughly coated in sauce. Taste and season with salt and pepper.

Divide stir-fry between bowls. Top with sliced scallion greens, peanuts, and remaining chili flakes to taste. Serve.
